Is it better to shoot in 4k and output to 1080 for tv and computer to watch it on? Or should i stay with 1080?

Shooting in 4K will allow you the ability to reframe, zoom in or to provide additional stabilization

I usually shoot in 1920/60, but just shoot in whatever gives you the results you want. Experiment.

How do you set a CGO3 or CGO3+ to shoot in 1080p rather than 4K? Is that something that can even be done??

Thanks! Any chance you could send me a "Conversation" with step-by-step instructions on how to do it on the CGO3+? Any assistance would be greatly appreciated!!
