First do you need anything to read the telemetry files or do you open them up in the text editor after changing it to a .txt?
Second, I keep hearing about 3rd party waypoint planners Tuna's and others. I guess my question is, what are all of the good options? Do they have up to date topography, and is it a plan, load and go?

Also will any VR goggles work if they have an HDMI?

You can open .csv files with a spreadsheet. Use "comma" separators. Excel or Open Office work fine.
UAV toolbox is the only flight planning app that will install on the ST16. UAV Toolbox - Yuneec ST-16
Any googles with an HDMI input should work with the ST16.
