What is the easiest way to set up a shoot with the following me but I am not the poi that I want the cam watching?

Got that but I don't want it to orbit the POI I want it to follow me while keeping the cam trained on the POI regardless of the altitude our orientation
The H will follow the controller so as long as you are holding it in Follow mode all you need to do is use the pan and tilt to keep the camera trained on your subject. Keep in mind the H will not change altitude when following the ST16. It will only do so with the Wizard. The ST16 does not have an internal altimeter.
I think you are talking about the Watch me and Follow me modes.
Watch me = Camera always looks at the ST-16, irregardless of where you fly the aircraft.
Follow me = Air craft will follow the ST-16 and keep the camera trained on the ST-16.
The camera has no means to keep an object in frame, it will attempt to keep the ST-16 in frame.
POI just uses the current camera orientation as the aircraft flies a circle.
