I have a 1080p camera on my phone buy breeze videos become pixelated from time to time is it the SD card or something else ?

Are you referring to the video display while flying or the video recorded on the Breeze’s internal SD card?
It's on the video sometimes I'll see it when flying just didn't know if it was my phone which is a ZTE grand x Max x2 or what I film in because I use FHD when filming
because my phone is 1080p
Jerky motions while flying or yawing too fast can cause pixelation (jello) in the recorded video. Another cause is when flying in windy/gusty conditions, as the flight control tries to maintain position.
