Bluetooth Connection Hit or Miss

My new iPhone SE operates in the 2.4 GHz and 5 GHz range but half the time it cannot find or connect to the Breeze controller. Is there a specific order I should adhere to when turning on my Breeze drone and the Controller and connecting to Wifi and connecting to Bluetooth? And, when I turn on the controller do I just press the power button or should I simultaneously press the "A" button or the "Y" button?

That worked for me:
Set Mobile to airplane mode
Kill all apps (Android) (IOS = ??? )
Power on the Breeze and wait until the front left leg is blinking green (my take up to 90 seconds)
Start Breeze cam app
Activate WiFi from within the app
Let the Breeze connect
Start task "Controller"
Start the controller by pressing the buttons "A" (for Android) or "Y" for IOS and the button in the center
Release the center knob first, then "Y" (assuming you are on IOS)
Tap the controller symbol in the breeze app at the bottom right corner
Bluetooth will be activated and the controller found (hopefully ;) )
Well that is the sequence that works for me, but keep in mind that there are several releases of the controller out there (EU vs. US, old vs. updated firmware...) Sometimes it helps not to rush these steps and give the hardware some time for "consideration"

Since you are using an iPhone SE be sure both WiFi and Bluetooth are enabled in Settings.

If you try using the Bluetooth connection function in the iPhone Settings, you will get erratic behavior like you are experiencing.

Power on the Breeze, and when the Status LED (in the arm) blinks green connect via WiFi. Open Breeze Cam and select the Controller Task mode. Power on the Controller using Power+Y(you only need to do this the first time, unless you are also using an android device at times). Now Slide to Proceed, the Controller should vibrate and show connected in Breeze Cam. You can now activate Experience Now.
