I accidentally left the cover on and turned on the copter. Will this cause and permanent damage to gimbal cablibration? It was on for about 2 minutes

No damage. All drones are designed to stop movement of parts if encountering resistance, to prevent damage.

I took an 18" piece of orange surveyors tape and taped it to the cover so I won't forget to remove it.

Smart. Really need to add one of those "REMOVE BEFORE FLIGHT" items on it.
