does the exif metadata contain the gimbal pitch yaw roll relative altitude and all or just gps and altitude.

Altitude and location.
As the gimbal maintains level relative to the horizon I can’t understand why the aircraft attitude and position relative to a compass point might be useful. I can understand a desire for lens angle in degrees relative to a vertical datum but we don’t get that either.
