Not sure when I slide my battery in the correct way with the handle out inside the battery holder of the drone(towards the front top right of the battery casing), there is a plug with a wire connected to it inside that doesn't connect to anything to the battery, what is this for?

GUI = Graphic User Interface, although the word is used incorrectly, it refers to a pc software you can connect your Q500 to.

In programming, the GUI is the front-end, its what the user sees, not the full software itself. The logic code is called the back-end, and both ends together is what creates a software, and that is what that cable is for. To connect your Q to the software.

The software helps you diagnose motor problems, it gives you the option to upgrade your Q firmware, it lets you see the status of the sensors your quadcopter has, among other stuff.

If I just bought the Q500 two days ago, do you think there will be an update already that I should plug in and upgrade the software or should it be up to date as I bought it two days ago?

You'll only know your software version if you hook up to the GUI.
What version shows in the Transmitter ?
Look to You Tube videos for help getting the info your looking for.
You may very well be up to date.

Your Q might have been in the store/warhouse for months before getting to your hands.

I ended up buying the H model and returning the Q500, but I know how to check the updates now on the H because it's on the controller.
