When I have set camera to M it seems sometimes when I adjust the exposure settings the screen does not display the changes. Only when I review the image on the ST16 do I see the blown out image. Is there something I am missing?

That is normal for the CGO-4. It’s why it has been called a great video camera but not so great stills camera. Unless you use the video mode to adjust the camera settings then use them for the stills there’s too much guesswork needed for still captures. Even using the video settings for stills reference you’ll need to bracket.
hmmm well that's pretty stupid, who thought up that idea 
I adjusted for DNG on stills as well and somehow they all came back as Jpegs, just have to see how well the capture from video shots come out.
The odd thing is sometimes I do see an adjustment on the live view in M mode.

Perhaps the DNG setting didn’t “stick”. Seen that happen with ISO and EV settings.
As for being pretty stupid, Yuneec seems to demonstrate that attribute much too frequently.
