As Doom states, ESC’s run at some frequency, like 8khz (or other). These timed pulses of varying pulse width control how fast the motor turns. The timing is critical for the motor to run properly and varies based on the number of poles in the motor.
In other RC applications there are many programmable settings for ESC’s. The Breeze (Yuneec) has already set these parameters for you. I’m not aware you can chance them.
As a side note, ESC’s have current ratings (limits) like 5,10,15 ... amps. The motor load needs to be controlled closely so you don’t exceed these ESC limits, else the ESC ‘blows’ (you’ll see smoke).
